Reached by email, Food & Wine editor-in-chief Hunter Lewis said two dishes at Mr. Tuna particularly highlighted Rubin’s talents. “His Tuna de Tigre ceviche layers ruby-red tuna with a coconut, lime, and chile sauce that nods to both Peru and Thailand, showing his playful global pantry,” Lewis said. “And his Skin N’ Dip transforms crispy salmon skin into a chip with yuzu mayo, a clever, sustainable riff on chips and dip that reflects his commitment to whole-fish dining.”

The building for the King’s Head Pub, located at 115 Main St. in Freeport, had not been updated when O’Connor took it over. New plumbing and electrical work were incorporated into the building throughout 2025, enhancing the interior to resemble its other locations.
